Restructure: new nvim/tmux/editorconfig, remove stale packages

Replace the old nvim package with the new minimal config.
Add tmux and editorconfig packages in dot- convention.
Remove i3, kitty, alacritty, and xbindkeys packages.
Use /bin/sh in the Makefile; zsh is not on every machine.
Add .stowrc so plain stow works without the Makefile.
